Curried Citrus Chicken Papaya (Fiji) |

Adapted from Sam Choy's Polynesian Kitchen. This can be served as a main dish or an appetizer; number of servings is for main dish. Ingredients:
1 cup flour |
2 teaspoons curry powder |
1 teaspoon paprika |
1 teaspoon seasoning salt |
1 teaspoon white pepper |
3 lbs boneless skinless chicken thighs |
1 1/2 cups orange juice |
2 teaspoons curry powder |
1 tablespoon cornstarch |
1/3 cup brown sugar |
2 cups sliced papayas |
2 teaspoons minced ginger |
2 teaspoons minced garlic |
2 teaspoons chopped cilantro |
cooked rice |
sliced papaya, citrus fruit, cilantro and flowers, for garnish |
6 rotis, warmed until pliable (or flour tortillas) |
Directions:
1. Preheat oven to 350°F. 2. Combine curry mixture ingredients in a large bowl. 3. Dust chicken in curry mixture. 4. Pan-fry chicken in wok over high heat. 5. Combine sauce ingredients and set aside. 6. Combine seasonings. 7. Place chicken in a baking pan, and pour sauce over the top. 8. Sprinkle with seasoning mixture. 9. Bake for 45 minutes. 10. Pour chicken curry over a bed of cooked rice. 11. Garnish with papaya, citrus fruit, cilantro and flowers. 12. To eat, break off pieces of roti or tortilla and use them to scoop up curry. |
