Ingredients:
1 (5.6-ounce) package couscous with toasted pine nuts (such as near east) |
1 (15-ounce) can chickpeas (garbanzo beans), rinsed and drained |
4 teaspoons curry powder |
6 tablespoons light honey-mustard salad dressing (such as maple grove farms) |
1/2 cup sliced green onions |
1/2 teaspoon pepper |
Directions:
1. Cook couscous according to package directions, omitting salt and fat; spread on a baking sheet, and let cool completely. Combine couscous, chickpeas, and remaining 4 ingredients in a large bowl; stir well. Cover and chill. |
