Curried Chicken With Couscous

Ingredients:
1 cup water
1 (14 ounce) can light coconut milk
1 teaspoon salt
1 cup uncooked couscous
1 tablespoon flour
1 tablespoon curry powder
1 lb boneless skinless chicken breast
2 teaspoons vegetable oil
1 cup carrot, julienned
1/3 cup raisins
1/4 cup fresh cilantro, chopped
Directions:
1. Cut chicken in 1/2 inch strips.
2. Combine water, 3/4 cup coconut milk, and 1/2 teaspoon salt in saucepan. Bring to boil. Gradually stir in couscous. Remove from heat, cover and let stand 5 minutes. Fluff with a fork.
3. Combine 1/2 teaspoon salt, flour, and curry. Add chicken and toss to coat.
4. Heat oil in large non-stick skillet over med-high heat. Add chicken and stir fry for 5 minutes.
5. Stir in remaining coconut milk, carrot and raisins; reduce heat, and simmer for 7 minutes or until chicken is done.
6. Serve over couscous. Sprinkle with cilantro.
