Curried Chicken Salad With Marionberries |

Very creamy, very tasty chicken salad. Great as a main deal, appetizer or snack. Enjoy Ingredients:
1 pound boneless skinless chicken breasts |
1 tablespoon olive oil |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
1/3 cup mayonnaise |
1 tablespoon dry white wine |
2 tablespoons mango chutney |
1/2 tablespoon curry powder |
1/4 tablespoon lemon juice |
1/4 teaspoon ground ginger |
1 green onion chopped |
1 celery stalk chopped |
1/4 cup raisins |
2 cups fresh or frozen marionberries |
1/2 cup roasted salted cashews |
Directions:
1. Heat olive oil in nonstick cooking pan. 2. Add chicken breasts and sauté for 5 minutes. 3. Turn over and sauté 5 more minutes. 4. Season with salt and pepper. 5. Remove from pan and cool in refrigerator 30. 6. Cut meat into 1/2 cubes. 7. Combine mayonnaise, wine, chutney, curry powder, lemon juice and ginger. 8. Add chicken, onions, celery, raisins and marionberries then toss to coat. 9. Season with salt and pepper. 10. If using frozen berries allow to sit in refrigerator for 1/2 hour before serving. 11. Immediately before serving add cashews. 12. Serve on a bed of lettuce or in pocket bread. |
