Curried Chicken Salad Sandwiches |

Quick and easy to make and can serve in a sandwich over cantelope and as a main meal. Ingredients:
2 cups cubed cooked chicken breast |
3/4 cup chopped apple |
3/4 cup dried cranberries |
3/4 cup mayonnaise |
1/2 cup chopped walnuts |
1/2 cup chopped celery |
2 teaspoons lemon juice |
1 tablespoon chopped green onion |
1 teaspoon curry powder or more if want |
6 lettuce leaves |
6 croissants split |
Directions:
1. 1. In a large bowl mix the first 9 ingredients on the list. 2. 2. Place lettuce on the croissant. 3. 3. Top with the chicken mixture. |
