Switch up your usual chicken salad for Curried Chicken Salad. This spicy-sweet version stirs in ginger and curry powder with raisins, coconut, and peanuts. Ingredients:
1/2 cup mayonnaise |
1/2 cup sour cream |
1/4 cup finely chopped green onions |
1 tablespoon grated fresh ginger |
2 teaspoons curry powder |
4 cups diced cooked chicken |
1 cup diced celery |
3/4 cup golden raisins |
3/4 cup diced yellow bell pepper |
3/4 cup toasted sweetened flaked coconut |
1/2 cup chopped lightly salted roasted peanuts |
Directions:
1. Whisk together first 2 ingredients in a large bowl; whisk green onions, ginger, and curry powder into mayonnaise mixture. Stir in chicken and celery. Stir golden raisins and bell pepper into chicken mixture. Add salt and pepper to taste. Chill 3 hours. Stir in coconut and top with peanuts just before serving |
