Ingredients:
1/2 cup light mayonnaise |
1/4 cup plain yogurt |
1 tablespoon curry powder |
1 tablespoon fresh lime juice |
1/2 teaspoon salt |
4 cups shredded skinless cooked chicken (from a rotisserie chicken, about 12 oz.) |
1/2 small red onion, thinly sliced |
1 ripe mango, peeled, pitted and diced |
2 celery ribs, chopped |
6 cups mixed greens |
Directions:
1. Whisk together mayonnaise, yogurt, curry powder, lime juice and salt in a small bowl. Combine chicken, onion, mango and celery in a large bowl. Spoon dressing onto chicken mixture and stir. 2. Divide greens among four plates, top each with a portion of chicken salad and serve. |
