Perfect side dish or wonderful for sandwiches. Ingredients:
shredded meat from 1 small chicken |
2 stalks celery diced |
2 scallions minced |
3/4 cup mayonnaise |
2 tablespoons lemon juice |
2 tablespoons minced cilantro |
6 tablespoons golden raisins |
2 teaspoons curry powder |
1 tablespoon honey |
salt and pepper to taste |
Directions:
1. Mix all ingredients together in a large bowl. Serve. Can be covered and refrigerated overnight. |
