I found this in Cooking Light Magazine. A wonderful summer lunch or dinner salad. Serve it over flavourful greens and you will forget it's not a heavy meal. Ingredients:
8 oz cooked boneless, skinless chicken breast |
1/2 cup red or purple grapes |
1/4 cup canned mandarin oranges juice pack (optional) |
1 medium apple(s) |
1 cup celery |
1/8 cup raisins |
1 tbsp chopped pecans or almonds |
dressing |
3 tbsp kraft light mayonnaise |
1/2 tsp lemon juice, canned or bottled |
1/2 tsp curry powder |
1/8 tsp table salt |
1/8 tsp black pepper |
1 tbsp chopped pecans or almonds |
Directions:
1. Mix together dressing ingredients 2. chop the celery and apple into attractive chunks 3. mix in raisins, nuts and oranges 4. pour dressing overtop and mix well 5. I allow it to mellow in the fridge for a few hours before serving, it allows the flavours to develop. 6. serve of mixed greens for a filling but light meal |
