This is an adaptation of a recipe from Colorado Cache, and a go to meal for hot summer nights Ingredients:
whole chicken, cooked, skinned, deboned and chopped |
1 small can pineapple tidbits, in its own juice, drained |
1 granny smith apple, peeled and chopped |
1/4 cup raisins, (golden is best) |
2 tlbs chopped mango chutney |
dressing |
2-4 tsp curry powder (to taste) |
2 tlbs chicken broth |
1/2 tsp salt |
1/2 to 1 cup mayonnaise |
Directions:
1. Simmer curry powder in broth for 2 minutes, stirring to a smooth paste. 2. Cool 3. Add paste to mayonnaise 4. Combine ingredients 1 hour before serving 5. Note: the amount of curry depends on the kind and freshness. This recipe is calculated for fresh curry, which is stronger than old curry. |
