This is a recipe for those of you who can cook by eye and experience. Amounts are just a matter of preference. This is our daughter's favorite and something I make chicken soup for because that's the best choice for making chicken salad. Read more . The fruits are for texture and balance the curry wonderfully and add color. Serve it with greens, tomatoes, some brioche, and it's a really pretty meal. Ingredients:
1 pound cooked, boned chicken meat |
mayonnaise |
curry powder |
pepper |
1 apple, cored and chopped |
raisins |
snipped fresh chives |
greens and assorted vegetables to garnish and add to the plates for serving. |
Directions:
1. Mix all of these ingredients together. The mayonnaise is to bind and lend moisture, not be over done. 2. Chill before serving. This gives the flavors time to meld. 3. To serve: pile the chicken salad on a bed of greens. Arrange sliced tomatoes, sliced cucumber, sliced peppers, etc.a around the chicken |
