This is a 5 star receipe you will really enjoy I sometimes use leftover chicken or buy a cooked rotisorie breast to make this. Ingredients:
2 cups chicken breasts,cooked,boned |
6 ounces greenbeans |
12 ounces of multi-colored penne pasta |
2/3 cup lowfat yogurt(or sour cream) |
1 teaspoon mild curry powder |
1 clove crushed garlic |
1 green chili,seeded,finely chopped |
2 tblsp. fresh cilantro |
4 firm ripe tomatoes,peeled,seeded,and cut into strips |
salt |
fresh ground pepper |
fresh cilantro leaves to garnish |
Directions:
1. Remove skin from chicken breasts,cut in strips 2. Cut the green beans in 1 inch lengths and cook in boiling water for 5 minutes 3. Drain and rinse under cold water. 4. Cook the pasta according to directions until alldente. 5. drain and rinse thoroughly 6. SAUCE:mix yogurt,curry powder,garlic,chili,and chopped cilantro together in a bowl. 7. Stir i the chicken pieces. 8. Let stand 30 minutes. 9. transfer the pasta to a glass bowl and toss with the beans and tomatoes. 10. Spoon over the chicken and sauce. 11. Garnish with Cilantro leaves. 12. Enjoy and share! |
