If you like chicken salad and also like curry, this salad is delicious. It can be served wrapped in lettuce leaves, on cranberry toasted bread, or however you enjoy chicken salad. Ingredients:
3 cups of cooked, shredded chicken. i like to steam the chicken |
1cup diced celery |
1/4 cup sour cream |
1 1/2 tsp. good-quality (start with less you can always add more) curry powder such as frontier organic |
mayonnaise, again, a good quality, as much as you like |
1 tbs.dijon mustard |
1 tsp lemon pepper |
1/2 tsp celery salt |
1tsp. fresh ground pepper |
Directions:
1. Combine all the ingredients; add more mayo, salt and pepper to taste 2. I often add chopped cashews because I'm nuts over cashews 3. Black olives also make this dish sexy. |
