This spicy-sweet chicken salad is loaded with fruit. Eat it with whole-grain crackers or a toasted whole wheat baguette to increase your carbohydrates. If you don't have time to cook the chicken, pick up a rotisserie chicken at the supermarket. From Cookin Ingredients:
1/4 cup fat free miracle whip |
1 teaspoon curry powder |
2 teaspoons water |
4 oz chopped skinless, boneless grilled chicken breasts |
3/4 cup chopped apple (about 1 small) |
1/3 cup diced celery |
3 tablespoons raisins |
Directions:
1. Combine miracle whip, curry, and water in a medium bowl, stirring with whisk until well blended. Add the chicken, apple, celery,and raisins; stir mixture well to combine. Cover and chill for 3 hours. Serve on crackers or whole wheat rolls/bread. |
