We first had this at my cousin's house, in Denver & we just LOVED IT!!! Very easy to make & SOOOOOOO refreshing on a hot, lazy Summer day! The ingredient amounts are approximate. We love mayo, but prefer salad dressing with this. GREAT for leftover chicken, too! Ingredients:
4 pre-cooked chicken breasts, boneless & skinless |
3 cups seedless grapes |
3/4 cup miracle whip (more or less for desired consistency) or 3/4 mayonnaise (more or less for desired consistency) |
1/4 cup slivered almonds (optional) |
2 tablespoons curry powder (or to taste) |
Directions:
1. In a large bowl, break-up the cooked chicken into bite size pieces. (You can use white &/or dark meat). 2. Remove grapes (red or green) from stems & rinse with cold water - drain & add to the chicken. 3. Toss in the slivered almonds, if desired. 4. Add the Miracle Whip & the curry powder. 5. Mix all ingredients. 6. Cover & chill for AT LEAST 2 hours - overnight is best for best flavor! 7. Serve w/ Pita Pocket Bread or just it as is - ENJOY! |
