This is a lite version of the regular Curried Chicken - a simple, delicious Thai-style main dish. Ingredients:
2 lbs chicken, cut into small pieces - 1-2 |
1 t fish sauce |
1/2 c lite coconut milk |
1 t curry paste |
2 t basil, fresh for garnish |
Directions:
1. Sprinkle chicken pieces with fish sauce and let stand 5 minutes. In a wok or skillet, heat coconut milk and red, yellow or green curry paste (you can use more paste if you like) over low heat until mixture begins to bubble. Remove from heat and allow to cool. 2. Toss chicken pieces in curry mixture to coat. Cook over low heat until chicken is tender. 3. Option: add a chile pepper or two for a spicier dish 4. Coarse chop fresh basil or cilantro for garnish 5. Serve over brown rice |
