Not sure where I got this recipe from. But a great make ahead appetizer for parties. Ingredients:
1 cup dry white wine |
1 teaspoon curry powder |
1 teaspoon celery salt |
2 tablespoons orange marmalade |
2 pounds boneless chicken breasts |
Directions:
1. Cut chicken breasts into cubes or strips. 2. In large skillet, combine white wine, curry powder, celery salt and orange marmalade. 3. Bring to a boil. 4. Add chicken. 5. Add water to skillet to completely cover chicken. 6. Cover skillet and cook 2 to 4 minutes. 7. Stir. 8. Cover and cook until chicken juices run clear. 9. Remove from heat and chill in cooking liquid for 2 to 3 hours. 10. Drain. 11. Serve with Duck sauce or dipping sauce of choice. |
