Curried Chicken and Summer Fruit Salad |

Chicken, water chestnuts, grapes, melons, dressed and served on lettuce. Ingredients:
1 cup mayonnaise |
1 tablespoon fresh lemon juice |
1 teaspoon curry powder |
1 teaspoon soy sauce |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 cups cooked chicken, cubed |
8 ounces water chestnuts, drained and quartered |
1 1/2 cups red seedless grapes, halved (1/2 lb) |
1 cup honeydew melon, cubed (1/2 lb) |
1 cup cantaloupe, cubed (1/2 lb) |
6 lettuce leaves |
1/2 cup almonds, sliced and toasted |
Directions:
1. Combine the dressing ingredients and mix well. 2. Add salad ingredients minus the lettuce leaves and almonds, toss to coat. 3. To serve, place one lettuce leaf on each of 6 serving plates, top with salad, garnish with almonds. |
