Curried Chicken and Peach Salad |

Low fat version of a standard. Ingredients:
6 tbsp low fat mayonnaise |
6 tbsp fat free sour cream |
3/4 tsp lemon juice |
1/2 tsp curry powder |
1/8 tsp salt |
1/8 tsp ginger |
1/8 tsp cinnamon |
8 cups bibb lettuce, torn |
2 cups cooked chicken, chopped |
2 cups sliced peaches |
1/2 cup raisins |
2 tbsp fresh chives, chopped |
Directions:
1. For the dressing, combine mayonnaise through cinnamon and mix well. 2. For the salad, toss the lettuce through raisins with the desired amount of dressing. 3. Line 4 plates with lettuce leaves. Spoon 2 cups of the salad on the plates and sprinkle with chives. Serve immediately. |
