Curried Chicken And Grape Salad |

So easy to make-ahead, this Chicken Salad is cool and refreshing! And it's great for small luncheons and brunches too! Ingredients:
3 cups, diced cooked chicken (i use boneless chicken breasts) |
1 1/2 cups thinly sliced celery |
1 cup green seedless grapes |
1 tbsp lemon juice |
1 1/4 tsp salt (or to taste) |
1/4 tsp pepper |
1 1/2 tsp curry powder (or to taste) |
6 tbsp mayonnaise |
3 tbsp roasted slivered almonds (or more to taste) |
Directions:
1. Combine chicken, celery, grapes, lemon juice, salt, pepper and curry powder; toss lightly. 2. Refrigerate for several hours. 3. Garnish with almonds. 4. Serve on lettuce. |
