Curried Carrot Spread

If you are making this for a crowd,triple the recipe.
Ingredients:
1 cup carrots,sliced
1/4 cup onion,chopped
1 garlic clove,minced
1/2 teaspoon curry powder(please make sure it is fresh)
1/4 teaspoon ground cumin
2 tablespoons olive oil
1/2 cup white beans,canned,drained,rinised
1/8 teaspoon salt
garnish: cilantro sprigs or thinly sliced green onion(i like green zebra tomatoes,finely diced over top,but hard to fine and late in the year)
Directions:
1. Cook carrots in a small amount of boiling water in a covered pan,for about 8 minutes.
2. Cook onion,garlic,curry powder,and cumin in olive oil,(be very careful to not burn the curry powder)
3. Transfer carrots and onion mixture to a food processor or blender,add beans,salt.
4. Cover and process until smooth.
5. Place in serving bowl,can serve at once.
6. Serve with Toasted French Bread Baguette Slices.
