Ingredients:
1 onion, chopped |
1 garlic clove, minced |
2 lbs carrots, peeled and chopped |
4 c water |
2 vegetable bouillon cubes |
1 tbsp curry powder |
1 tsp cumin |
Directions:
1. Spray a fryingpan with non-stick cooking spray. 2. Add in onion and garlic. 3. Stir in spices. 4. Add the carrots and stir until carrots are coated. 5. Pour in the water and bouillon cubes and simmer until the carrots are tender, about 20min. 6. Transfer the carrot and broth to a blender and puree until smooth. 7. Pour back into pot and thin with water as needed. |
