Curried Butter Bean Casserole |

Entered for safe-keeping, MDM used to serve this for bridge parties, from Flavored with Tradition: A Collection of Recipes from Charleston, Atlanta, and Richmond . Ingredients:
20 ounces frozen butter beans |
3 slices bacon |
1/2 cup chopped onion |
1 garlic clove, crushed |
1/2 teaspoon curry powder |
10 3/4 ounces condensed cream of mushroom soup |
1/2 cup sour cream |
1/8 cup white wine or 1/8 cup dry sherry |
3 1/2 ounces french's french fried onion rings |
Directions:
1. Cook beans until just tender (about 7 minutes) and drain. 2. Cook bacon and remove from pan. 3. In bacon grease, saute onion, garlic and curry powder until onion is tender. 4. Mix soup, sour cream, and wine and add to pan. Heat but do not boil. 5. Add beans and crumbled bacon and pour into a greased 1 1/2 quart casserole. 6. Top with onion rings and bake uncovered at 325 degrees Fahrenheit for 25 minutes. |
