Ingredients:
1 pound boneless top sirloin steak, thinly sliced |
1 onion, chopped |
2 garlic cloves, minced |
2 teaspoons olive oil |
3 cups cooked brown rice |
1 1/2 teaspoons grated fresh ginger |
1 1/2 teaspoons curry powder |
1/2 teaspoon salt |
1/2 teaspoon ground red pepper |
2 medium apples, coarsely chopped |
1/2 cup apple juice |
2 tablespoons slivered almonds, toasted (optional) |
Directions:
1. Saute first 3 ingredients in hot oil in a large nonstick skillet over medium-high heat 5 to 7 minutes or until onion is tender. Stir in cooked rice and next 4 ingredients. 2. Stir in apple and apple juice; cook, stirring often, until thoroughly heated. Sprinkle with almonds, if desired. |
