Curried Beef Pitas with Cucumber Sauce |

A good friend gave me this recipe when I first got married. I was a bit apprehensive to try it since the ingredients weren't that familiar to me, but, years later, it's now one of our family favorites. Ingredients:
1 cup fat-free plain greek yogurt |
1 cup finely chopped peeled cucumber |
1 tablespoon minced fresh mint |
2 garlic cloves, minced |
2 teaspoons snipped fresh dill |
2 teaspoons lemon juice |
1/4 teaspoon salt |
pitas: |
1 pound ground beef |
1 small onion, chopped |
1 medium golden delicious apple, finely chopped |
1/4 cup raisins |
2 teaspoons curry powder |
1/4 teaspoon salt |
8 whole wheat pita pocket halves |
Directions:
1. In a small bowl, mix the first seven ingredients. Refrigerate until serving. 2. In a large skillet, cook beef and onion over medium heat 6-8 minutes or until beef is no longer pink, breaking up beef into crumbles; drain. Add apple, raisins, curry powder and salt; cook until apple is tender, stirring occasionally. Serve in pita halves with sauce. Yield: 4 servings (1-1/2 cups sauce). |
