Curried Beef and Potato Pots |

1 tablespoon olive oil |
1 brown onion, thinly sliced |
2 tablespoons mild curry powder |
500 g beef mince |
400 g diced tomatoes |
500 g desiree potatoes, peeled, chopped |
100 g sour cream |
2 green onions, thinly sliced |
Directions:
1. Heat oil in a large saucepan over medium heat. Add brown onion. Cook, stirring, for 5 to 7 minutes or until tender. Add curry powder. Cook for 1 minute or until fragrant. 2. Add mince. Cook, stirring with a wooden spoon to break up mince, for 5 minutes or until browned. Add tomatoes and 3/4 cup cold water. Simmer for 15 to 20 minutes or until thickened. Season with salt and pepper. 3. Meanwhile, place potatoes in a large saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium-high. Boil, uncovered, for 15 minutes or until tender. Drain. Remove to a bowl. Mash potatoes. Add sour cream and green onions. Season with salt and pepper. Stir to combine. 4. Spoon beef mixture evenly into four 1 1/4 cup-capacity ramekins. Top with potato mixture. Serve. |
