Recipe is from my Necessities and Temptations cookbook. You can use low-fat mayo and sour cream in this dish. A nice side dish to any meat or as part of a vegetarian dinner. Ingredients:
4 medium ripe tomatoes |
1/2 cup sour cream |
1/2 cup mayonnaise |
1/2 teaspoon curry powder (or more to taste) |
1/4-1/2 teaspoon salt |
Directions:
1. Preheat oven to 350 degrees. Cut each tomato in half. Mix sour cream, mayonnaise, curry powder and salt until well blended. Top each tomato with a portion of sour cream mixture. Place tomatoes in a shallow, buttered dish. Bake approximately 20 minutes or until thoroughly heated. Do not overbake. Serve hot. 2. As a variation, you can add shredded cheese, chopped chives, crisp bacon, fine bread crumbs, etc. |
