Curried Baked Cauliflower |

Very rich and spicy. Can be served over cooked rice for a meatless meal,. Ingredients:
1 large head cauliflower, separated into florets |
1 can cream of chicken soup |
1/3 cup mayonnaise |
1 tablespoon curry powder |
1/2 teaspoon salt |
1/2 teaspoon cayenne pepper |
12 ounces cheddar cheese, shredded |
2 tablespoons butter, melted |
1/4 cup panko breadcrumbs |
Directions:
1. Cook cauliflower in 1-inch boiling salted water just until tender-crisp. Drain. 2. Whisk together cream of chicken soup, mayonnaise, curry powder, salt, cayenne and cheddar cheese. 3. Fold in cauliflower. 4. Spoon into greased baking dish. 5. Combine breadcrumbs and melted butter. Sprinkle over cauliflower. 6. Bake at 350 degrees for 30 minutes or until bubbly. |
