20 Minute Meals - Serve with chicken cutlets. Ingredients:
1 tablespoon vegetable oil |
1 shallot, finely chopped |
1 teaspoon curry powder |
1/4 cup red wine |
2 tablespoons apricot preserves |
1 cup mayonnaise |
fresh lemon juice |
Directions:
1. Heat oil in small skillet over medium high heat. 2. Add shallot and sauté until tender, about 3 minutes. 3. Stir in curry powder and cook 1 minute. 4. Add wine and preserves and stir until blended. Cook 1 minute. 5. Remove pan from heat and stir in mayonnaise. Season to taste with lemon juice. |
