Currant And Almond Pilaf

A different twist on rice pilaf with the addition of currants. Very tasty.
Ingredients:
1 tbs butter
1 cup long grain rice
11/2 cups water or chicken broth
1/4 cup currants
2 tbs. toasted sliced almonds
salt and pepper
Directions:
1. In a small saucepan,melt butter over medium. Add rice. Cook,stirring until lightly toasted,about 5 mins. Add water or broth and bring to a boil. Reduce heat to low,cover,and cook till tender,about 15 mins.
2. Remove pan from heat and let stand covered 5 mins. Stir in currants and almonds. Season with coarse salt and pepper.
