Curly Endive Salad With Ham And Gruyere |

This recipe makes just enough of your own salad dressing without leaving bottles sitting on the refridgerator shelf. Ingredients:
1 curly endive (any leafy lettuce works just as well) |
vinaigrette |
1 tsp dijon mustard |
2 t light olive oil |
3 t whipping cream |
1 tsp white wine vinegar |
salt and white pepper (fresh ground if possible) |
garnish |
4 1/2 oz. diced gruyere or emmanthal cheese |
4 1/2 oz smoked ham cut into small strips |
3 1/2 oz. small button mushrooms sliced thin |
chopped chives |

Directions:
1. Endive 2. Remove dark leaves, cut off root and wash in a bowl of water twice, 3. Shake dry and chop roughly 4. Vinaigrette 5. Put Dijon in the serving bowl. 6. Whisk in the oil in a thin trickle until fully absorbed. 7. Whisk in the cream and then the white wine vinegar. 8. Season with a pinch of salt and about 4 turns of the pepper mill. 9. Assembly 10. Mix the garnishes into the vinaigrette. 11. Add the chopped endive and toss until blended.Sprinkle with the chives. 12. Add the croutons just before serving. |
