Simple and tasty slice served to me with a cuppa from a lady who runs a B&B. I liked it so much that I asked her for the recipe. Ingredients:
1/2 cup margarine, melted |
1 cup coconut, dessicated or shredded |
1 cup self raising flour |
2 eggs |
1 cup sugar or 3/4 cup raw sugar |
1/2 cup raisins (or any dried fruit, more or less according to your taste) |
1/2 cup chocolate chips (more or less according to your taste) |
Directions:
1. Mix all ingredients together 2. Place in slice tin 3. Bake in a moderate oven (180C) 25 - 30 minutes 4. Cool in tin, slice and then dust with icing sugar 5. Variation: Add 1 or 1 and a half chopped green apples and some cinnamon in place of dried fruit and chocolate 6. Serve hot with custard |
