In any occassion back home in India my father use to make this dish for us ... he loves it ... so do i the flavour n the taste remains still in my memory . There are too many recipes out there on internet ... Read more . im just uploading one of my way to make it ... it goes very well with mutton or chicken curry even with green peas n potato curry (the recipe which i willupload asap) or with fava ( pigeonpea) cooked with spinach .... or just simply some raita ( yogurt salad) Hope u Enjoy the recipe !!!!!! Ingredients:
1 1/2 cup of good quality basmati rice |
3 tbsp of clarified butter ( ghee) or oil |
1 tbsp of cummin seeds |
1 tbsp of carom seeds ( parsely seeds) |
1 bay leaves |
1 small onion |
2-3 cloves |
1 small cinnamon stick |
3-4 peper corns |
few cashewnuts for garnish |
salt to taste |
2 cups water to boil the rice .. |
Directions:
1. Clean n wash the basmati rice n soak it atleast for 30 mins prior cooking 2. In a heavy sauce pan add ghee n fry cashewnut till golden brown remove n keep a side 3. Add the spice n saute it on a medium to low flame for few seconds then add onion n cook till translucent .... 4. Drain the rice from the water n slowly carefully add it to the spice mix add salt to taste mix all the ingredients well add water n bring to a boil n then slow down the flame completely cover the lid let it simmer ... cook until rice is done ..... 5. Garnish with the cashew nut n some corrainder leaves( if available) 6. Ready to Serve Enjoy !!!!!!!!!!!!!!!!! :-P 7. Tip : 8. Carom seeds is optional ... its a very good digestive spice ... in early spring u can put in soil n if few months u will have parsely in ur garden or ur plant pots :) 9. u can use clarified butter ( i have the recipe on my profile ) or oil as per ur choice .... 10. Thank you ... any comments or suggestions are most welcome n ofcourse ur ratings will be appericiated for sure !!!!!!!!!! :-P |
