Rajas are a type of stewed chili pepper. In Mexico they are traditionally served with different broiled meats.
Ingredients:
1 large (about 8 ounces) 1 1/4-inch-thick new york steak
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Directions:
1. Preheat broiler. Season steak generously with salt and pepper. Rub both sides of steak with cumin and cayenne pepper. Broil to desired doneness, about 3 minutes per side for medium-rare. Transfer to platter and serve with Rajas.
