Pungent, sharp, and slightly bitter, cumin is a common ingredient in Indian spice blends and Mexican foods. Like other spices, it should be stored in a cool place away from heat. Ingredients:
2 yellow squash, halved lengthwise |
1 tablespoon olive oil |
1/4 teaspoon ground cumin |
1/4 teaspoon salt |
1/8 teaspoon ground red pepper |
Directions:
1. Preheat oven to 450°. 2. Place squash halves, cut sides up, on a baking sheet; drizzle with oil. Bake at 450° for 20 minutes. 3. Cook cumin in a small nonstick skillet over medium heat, stirring and shaking often, 3 to 4 minutes or until fragrant. Combine cumin, salt, and red pepper in a small bowl.
