Cumin Scented Carrot Slaw |

While making a carrot cake, I got carried away with the carrot shredding and the surplus became a slaw. Ingredients:
3 cups of shredded carrot |
3 ribs of celery, destringed, and chopped fine |
2/3 cup of golden raisins |
3 tbsp of honey |
2 limes, zested, and juiced |
1/2 tsp to 1 tsp of white vinegar |
1 tbsp of yellow mustard |
cumin-i started with a 1/2 tsp and then kept shaking in enough until it perfumed the whole salad. |
pinch of salt, a few grind of black pepper |
mayo or yogurt. (i added a spoonful of mayo to stretch the dressing for the amount of carrots. lower fat version could use plain yogurt) |
Directions:
1. Grate carrots. 2. Chop celery. 3. Mix carrots, celery, raisins and lime zest. 4. Whisk honey, lime, vinegar, mustard and season with cumin salt and pepper. I added enough cumin to give the dressing a faint rusty color. I added enough vinegar to make it extra tart to combat the sweetness of all the raisins. 5. If it seems to dry, add a spoonful of mayonnaise or yogurt to make more dressing. 6. Pour over carrots, cover and chill. |
