These potatoes go well with chicken, beef, lamb and pork. They add zest to a mild main dish as well as compliment more complex flavors. Ingredients:
3/4 lb. baby red skinned potatoes |
2 t olive oil |
1-2 t cumin |
1t kosher salt |
Directions:
1. Preheat oven to 400F 2. Halve the potatoes (or quarter them for consistent size) . 3. Toss with olive oil. 4. Add 1 t of cumin and mix by hand until well coated. 5. Add more cumin as needed or desired. 6. Add salt and toss to coat. 7. Spread potatoes out onto baking sheet and place into oven for 25-30 minutes. 8. Halfway through cooking time, toss potatoes and return to oven. 9. Sprinkle with more kosher salt, if desired, and serve. |
