Ready, Set, Cook! Special Edition Contest Entry: Corn and potatoes are a match made in culinary heaven. Crispy, hot potato cakes are topped with a cool corn and tomato relish. Delish! Ingredients:
1 (20 ounce) package simply potatoes® shredded hash browns |
2 eggs |
2 tablespoons flour |
1 teaspoon cumin |
1 teaspoon salt |
1 tablespoon canola oil |
1 1/2 cups frozen corn, thawed |
1 cup tomato, diced |
1 cup red pepper, seeded and diced |
1/2 cup green onion, diced |
1/4 cup fresh cilantro, chopped |
1/2 teaspoon salt |
Directions:
1. In a medium bowl mix hash browns, eggs, flour, cumin, and salt. Form potato mixture into four equal sized patties. 2. Heat oil in large skillet over medium heat. 3. Cook potato latkes 4-5 minutes per side, until golden. 4. Meanwhile, mix corn, tomato, red pepper, green onions, cilantro, and salt in a small bowl. 5. Remove latkes from heat and plate. Top each latke with one-fourth of tomato mixture. Salt to taste and enjoy! |
