CUMIN CHICKEN AND NOODLE SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ranger Estate in Quinlan, Texas in 1994. Ingredients:
1 pound boneless skinless chicken breasts cubed |
1/2 teaspoon salt |
1/2 teaspoon ground cumin |
1/2 teaspoon freshly ground black pepper |
2 cups water |
2 cups chicken broth |
3 ounce package chicken flavored instant ramen noodles broken up |
3 cups frozen mixed vegetables |
Directions:
1. Brown chicken over medium heat 6 minutes or until outside surface is no longer pink. 2. Pour off drippings then add salt, cumin and pepper. 3. Stir in water, broth and seasoning packet from noodles. 4. Bring to a boil then stir in noodles and vegetables and return to boil. 5. Continue cooking until noodles are tender about 3 minutes. |
