this recipe here is how to make Cudiri', a very old Italian favorite for a cheap quick tasting snack or lunch. Cudiri' is an Italian word It's pronounced Kood-eeri' Ingredients:
1/4 oz package active dry yeast. (found at your supermarkets) |
4 cups flour |
1 cup warm water |
1/2 tsp. salt |
oil to fry |
Directions:
1. Add yeast to warm water and stir until dissolved. Follow direction on the package. A tip: Let the water and mixed in yeast stand for 3 hours before using. 2. Mix flour and salt in a bowl. Add water with dissolved yeast to the flour mix. Knead the dough 5-10 minutes. Add more water or flour as required to have a non-sticky soft dough. Form into a round loaf about 4 inches thick. Place in a covered bowl or pan until double it's original size. 3. Cut a small piece of loaf and pat with your palms into pieces 1/2 -1 thick by 3 wide or so and about 5 long. You don't need to form a perfect rectangular dough patties. Place individually in hot oil, about 1 to 1-1/2 minutes on each side until light to medium brown. Sprinkle generously with sugar and serve warm. Enjoy! |
