Appetizers or side dish with north african influence. spicy ,sweet andtangy Ingredients:
2 pounds fresh pumkin or squash peeled and cubed |
1 large peeled potatoes quartered |
3 red chillis |
2 table spoons coriandre seeds |
3 large cloves of minced fresh garlic |
3/4 teaspoon ground cumin |
3/4 teaspoon citrus salt |
1/2 cup chopped parsely or chopped cilantro |
2-3 tablespoon extra virgin olive oil |
salt to taste |
1/2 lime |
Directions:
1. In a mini blender add garlic,chillis , coriandre and garlic 2. whiz till finely blended to make a medium coarse paste 3. boil potatoe in hot water till done about 10-12 minutes 4. steam pumkin or cubed skinless squash for 10 minutes 5. or till done. test doneness by a fork 6. in a lrge bowl mash pumkn,boiled potatoes and mix well 7. add chilli garlic paste,citrus salt and mix all very well 8. salt to taste 9. drizzle olive oil and mix 10. sprinke with chopped parsely or cilantro 11. this can be used as a side dish with some grilled meats or fish 12. with a teaspoon scoop some on fresh pita bread triangles 13. goes well with light white wine or ice cold pilsner 14. very pleasing to the eye and extremely healthy |
