I found this recipe back in the mid 1970's, it was published in the cooking section of the Star Telegram. It's always been a great way to use up those cucumbers from the garden. Ingredients:
3/4 cup vinegar |
3/4 cup water |
1 small onion (sliced) (optional) |
2 tablespoons sugar |
1 teaspoon salt |
4 whole peppercorns |
4 large cucumbers |
2 cups sour cream |
salt |
Directions:
1. Combine vinegar, water, sugar, salt, and peppercorns. Slice cucumbers thin, and break up onions in rings. Marinate them in vinegar mixture 2 to 3 hours. Stir occasionally. Drain well. Gently mix cucumbers with sour cream. Salt to taste. Makes about 3 cups. |
