Cucumbers and Tomatoes in Yogurt |

From The Vegetarian 5-Ingredient Gourmet Cookbook. Goes well with spicy dishes to cool down the toungue. Traditionally made with plain yogurt, I made it with vanilla by accident the first time but it gave it a nice sweetness. Ingredients:
1 large cucumber, peeled, seeded, and diced |
2 -3 medium tomatoes, diced |
1 (8 ounce) container low-fat plain yogurt |
2 -4 tablespoons chopped fresh dill |
Directions:
1. Stir the yogurt until creamy. 2. Combine all of the ingredients in a serving container. 3. Mix thoroughly and serve. |
