Ingredients:
3 pounds cooked and quartered baby red potatoes
1 cup greek yogurt
1 cup peeled, seeded, and finely chopped cucumber
2 garlic cloves, pressed
2 tablespoons chopped fresh dill
2 teaspoons lemon juice
salt and freshly ground pepper to taste
Directions:
1. Stir together potatoes, yogurt, cucumber, garlic, dill, and lemon juice. Season with salt and freshly ground pepper to taste. Serve immediately.
