Ingredients:
3 pounds cooked and quartered baby red potatoes |
1 cup greek yogurt |
1 cup peeled, seeded, and finely chopped cucumber |
2 garlic cloves, pressed |
2 tablespoons chopped fresh dill |
2 teaspoons lemon juice |
salt and freshly ground pepper to taste |
Directions:
1. Stir together potatoes, yogurt, cucumber, garlic, dill, and lemon juice. Season with salt and freshly ground pepper to taste. Serve immediately. |
