Cucumber-Yogurt Dip for Vegetables |

This recipe recently appeared in our local newspaper. I've yet to make it - sounds delicious and can also be used as a sauce for meats. Ingredients:
2 cups plain greek yogurt |
1 tablespoon lemon juice |
1/2 cup olive oil |
1/2 garlic clove (finely chopped) |
1/2 cucumber (peeled, seeded and chopped) |
1/2 small onion (finely chopped) |
salt, to taste |
Directions:
1. In a bowl, whisk the yogurt, lemon jucie, olive oil, garlic and salt. 2. Stir in the cucumber and onion. 3. Cover and chill for at least 1 hour. 4. Serve with raw vegetables or crackers. |
