I can't believe I didn't notice recipes in BJ's magazine that is sent out. Here's another that looks great for summer! Ingredients:
2 seedless mini cucumbers |
1 c plain yogurt, drained (fat-free, if you like) |
1 c sour cream ( fat-free, if you like) |
1 tsp lemon juice |
1 tsp. chopped mixed herbs (parsley, dill,basil, mint., etc.) |
salt and pepper |
Directions:
1. Peel cucumbers and grate into a mixing bowl 2. Add yogurt, sour cream, lemon juice and herbs and stir. 3. Season to taste with salt and pepper 4. Refrigerate 1 hour 5. Great with pita chips, crackers, etc. |
