This recipe is refreshing salad that will cool you off on a hot summer day. Ingredients:
4 large tomatoes, cut into wedges, halved and seeded |
2 cucumbers, cut lengthwise, then sliced thin |
1 large red onion, peeled and sliced |
1 large green pepper, chopped |
dressing |
1/2 cup of olive oil |
1/4 cup of cider vinegar |
1 tbs. sugar |
1/2 tsp. salt |
coarsely ground black pepper to taste |
variations/suggestions |
instead of making the dressing above, try 3/4-1 cup of your favorite italian dressing. |
chop crusty bread in the bite size pieces, mix in before serving. |
Directions:
1. Place chopped vegetables in large bowl. 2. In a smaller bowl, wisk together oil, vinegar, sugar, salt and black pepper. 3. Pour dressing over vegetables and refridgerate for 1 hour. 4. Toss well before serving. |
