Cucumber Sour Cream Salad |

Dicing the cucumbers will make this salad into a sauce for poached fish (with dill). Variation : For Cucumber salad with dill, stir 1 tsp dill seeds into Cucumber Sour Cream Salad. Omit sugar if you like a tart salard. Ingredients:
1 tablespoon sugar |
1 1/2 teaspoons salt |
1 cup sour cream |
3 tablespoons grated onions |
2 tablespoons white vinegar or 2 tablespoons lemon juice |
4 1/2 cups thinly sliced peeled cucumbers (3 large, 6 medium) |
Directions:
1. Blend together sugar, salt, sour cream, onion and vinegar. 2. Stir in cucumbers. 3. Chill at least 2 hours. 4. Serve in lettuce cups for salad or on the tray with other relishes. 5. Makes about 6 cups, the exact amount depending on the size of the cucumbers. |
