This recipe has been in my family a VERY long time. I know there are all kinds of bisques and soups now. This has been around along time. It is basically a cream of potato soup with dil and cucumbers. This can be eaten cold as well. Read more . It is an old european recipe from my godfather's wife. I use to ask for this when I use to visit them.
Ingredients:
2 quarts water
4-5 large potatoes peeled and cleaned
3 medium cucumbers, peeled and sliced paper thin on grater
salt and pepper to taste
1/2 pint light cream
fresh dill
Directions:
1. Boil potatoes in 2 quarts water add some salt and cook. Remove potatoes and mash place back into pot. Add peeled and grated fine cucumbers. Cook until transparent. Remove from heat. Add cream salt and pepper. Sprinkle dill and serve.
2. Add the cream and seasoning last along with the dill before serving. Sometimes for a party or get together I make the base and bring it all up to a reheat and add the cream, seasoning and dill..
3. This is very refreshing and a great summer dish.
