Cucumber Slices Topped With Herbed Cream Cheese |

Found this in a Womens Weekly cookbook on fingerfood. It is quick and easy to prepare and makes a refreshing starter or fingerfood in summer. Ingredients:
125 g cream cheese |
1 tablespoon sour cream |
1 tablespoon fresh basil, chopped |
1 tablespoon fresh parsley, chopped |
1 teaspoon fresh oregano, chopped |
1/4 teaspoon fresh rosemary, chopped |
2 green shallots, chopped |
1 teaspoon lemon juice |
1 english cucumber |
20 oregano leaves |
1/4 red pepper (capsicum) |
Directions:
1. Process or blend 1st 8 ingredients together until smooth. 2. Cut cucumber into 5mm slices and top with cheese mixture. 3. Garnish with extra oregano and red pepper pieces. 4. Note: Cover and refrigerate for at least 2 hours before serving. This time is not included in the preparation time. |
